At Lobby Bar, in the bottom of the Hotel Chelsea, you feel like you’re drinking inside of the country estate of a well-funded aristocrat. There, you can sit on a banquette, eat a fried chicken sandwich, and watch a very experienced bartender make off-the-wall cocktails, like a noodle-inspired one with rum and sesame oil. Many of New York’s best cocktail bars are either dark and moody or dark and clubby.

Helmed by Tam Nguyen, one of the city’s most esteemed bartenders, Xào Xạc Bar (1 Street 47, Thao Dien), now in its second location, seamlessly αζορ blends into its verdant garden surroundings. ASMR distinguishes itself as a creative cocktail bar where modern mixology techniques come to life.

The cocktail as a full experience

Expect mojitos and rum runners to be served alongside fresh concoctions such as the Madame Hong, lead bartender/partner Danilo “Dacha” Bozovic’s highly praised recipe from his tenure at New York City’s Macao Trading Co. This Phoenix spot is a train-themed bar that uses window-framed screens to make you feel like you're on a moving train car. Created by the successful group behind Nightjar, Swift is a cocktail bar that's forever changed the way we think of a 'quick drink' between events. Known for its elite service, this is a space where the sixties and modernity combine, with each space a new experience, with a soundtrack of jazz to boost the setting. Not only are serves a form of entertainment here, with each drink in its own special glass or decanter, but they also host live music from 9pm every night, with a heavy focus on jazz – perfect for some romance.

What excites me the most is the sheer variety on offer, from sleek Mayfair hotel bars with martini trolley services to no-nonsense neighbourhood hang outs, there's something for everyone and it's impossible to get bored. The fit-out is very clearly inspired by Japanese whisky bars, so expect cosy feels, the sweet sounds of jazz, and a long, beautiful Californian redwood counter. If the bar on the ground floor appears a touch too busy to chase drinks from, we recommend making a beeline for the aforementioned Attic, where you'll usually have a better shot at exchanging banter with the bartenders. The obvious upside to the fact that Bellamy isn't a pure cocktail bar is the food on offer, which includes mouthwatering plates like hot sauce oysters, mussel croquettes, and the city's most smashable devilled eggs.
