How to Make an Authentic Neapolitan Pizza Recipe

This authentic Neapolitan pizza recipe starts with a long-fermented homemade dough, a fresh, uncooked tomato sauce, and simple, high-quality toppings. With a quick cooking time, the finished pizza has a soft, airy center and a puffy, blistered crust, just like a pie you’d find in Italy. All our breads are made using Shipton Mill organic flours. We don’t add any extra gluten, enhancers or additives. Just flour, water, yeast / ferment and salt. Just time and skill to use a slow cold fermentation process to make your loaves stay fresh for longer.

Here are our top recommendations for how to use homemade pizza dough. Who needs pizza delivery when it’s this easy to learn how to make homemade pizza dough? Our Test Kitchen created a foolproof pizza dough recipe that doesn’t require any special ingredients or tools. I’ll also share my go-to tips for storing, freezing and cooking.

The yeast basically goes to sleep in the freezer—don’t worry, that’s a good thing. Once that’s done, cut a pasta sheet in half and send it through your desired cutter attachment. Dust the strands well with semolina, then form into nests or lay flat (I prefer the latter option for smoother, less wrinkly pasta). The next step is to cut the dough into 4 equal pieces.

Italian homemade pasta freezes very well in any shape. For long pasta such as tagliatelle, form small nests and place them on a tray lined with parchment paper, leaving about 1 inch of space between each one. Freeze for 1 to 2 hours, until firm, then transfer the nests to a freezer bag and seal. Fresh pasta keeps well in the freezer for up to 1 month. You can use all-purpose flour or bread flour for homemade pizza dough, but 00 flour is our top choice.

Cut the dough in half and reshape each half into a ball. Take one dough ball and press fingers on the middle of the dough to flatten it until it is twice as wide. Turn the dough and repeat, until it measures about 24cm in diameter. Place the dough (pizza base) on baking paper and place on a baking tray. Top your pizzas and place tray in the centre of the oven. Check product is piping hot before serving.

There’s a time and place for artisan loaves and fancy brick-oven pizza crusts…

  • I love the croissants and cheese scones as well.
  • Instead of eggs, the dough is made with semolina flour (durum wheat) and water.
  • Using a long, sharp knife, slice it into even strips.
  • To proof yeast, mix the warm water and 1 teaspoon sugar in a small bowl.
  • You can use only “00” flour if you prefer a silkier dough, but the 50/50 blend gives the most balanced result.

For more information read our guide How to Cook Fresh Pasta. Shape the pasta, freeze it for 1–2 hours on a tray, https://pizzaartisan.co.uk/ then transfer it to a freezer bag. Lightly dust the surface with the semolina flour. Take a piece of dough about the size of a tennis ball and flatten it with your palms.

If the dough won’t stretch easily, take a break and let it rest for a few minutes. To proof yeast, mix the warm water and 1 teaspoon sugar in a small bowl. Add the active dry yeast and whisk until dissolved. Let stand until the mixture is frothy and bubbles form on the surface. Simple ingredients and little bit of love is all you need to make your own perfect pasta dough.

You can knead the dough by hand, as shown in this Italian homemade pasta recipe, or use a stand mixer like the KitchenAid to save time and effort. Fresh pasta dough needs energy and proper handling, and a mixer can make the process easier. If you use a stand mixer, choose the spiral dough hook, which is ideal for pasta, pizza, and other heavy doughs.

Dough that tears is usually too cold or under-fermented. Let the dough fully come to room temperature and avoid adding extra flour, which can dry it out and weaken the structure. Shape the smooth dough into a ball and place in a bowl. Cover with a dish cloth and let rise in a warm place for one hour (or until the dough has doubled). Knead for 4-5 minutes, or until smooth and elastic. Add more flour if the dough is continues to stick to your hands.

I haven’t tried everything yet, but that’s the plan, as every single thing has been excellent. Originally from Belgium Laura Verbeek moved to London to train as a contemporary dancer. Fresh pasta lasts 1 to 2 days in the refrigerator if stored properly and lightly dried first. Beyond that, it starts to darken and lose its texture.

Pulse several times until the dough comes together. Remove the dough to your work surface and let rest for 1 minute. If the dough is a bit sticky after resting, add a sprinkle of flour. Knead by hand for 1-2 minutes (the food processor does most of the kneading for you).
